CHILLI MUSHROOM MASALA
Chilli Mushroom Masala
My mother never used mushrooms in her cooking so it wasn’t until later in life that I discovered the wonderfulness of mushrooms. I think it was whilst at Hendon Police training school when we had the best cooked breakfasts !!! every day. So I wanted to create a spicy mushroom curry that just leaves you wanting more. Mushrooms are great for people wanting to cut out meat, as they have a meaty texture and body.
I use Fennel as my star ingredient which brings out the depth of flavour of the mushrooms. Also I have added fresh green chillies as the mushrooms can take it, BUT you can adjust this or even leave it out for a gentler dish.
